Our Story

Nat and Alison met working side-by-side behind a cheese counter in Chicago in 2007, as well as Chicago's vibrant Green City Farmer's Market. Each came from a background in food, with Nat working as a cook and Alison as a pastry chef and baker for many years before finding our way into the wonderful world of cheese. Our passion for cheese and all-things-delicious (and each other!) turned our curiosity to the process of cheesemaking and where it all comes from. In 2010 we took the first step down this path to work at the first farmstead goat dairy in central Illinois, Prairie Fruits Farm and Creamery. Under their tutelage, we learned the ropes of cheesemaking and goat husbandry while tending our garden and reveling in our love of farmers markets, cooking and canning. In our continued pursuit of delicious and a dedication to contribute to a healthier and more sustainable food system, we decided to find our own way in farming and in 2013 settled on 60 acres of tallgrass prairie just outside of Alison's hometown of Manhattan, Kansas on the Northern edge of the rolling Flint Hills. To christen our new-found home, we married in our favorite pasture in 2014. In 2017 we welcomed the triumphant arrival of our daughter Mary. 

Most important to us is a commitment to seasonal, diversified and sustainable farming practices, and to produce the best tasting and best quality food available. This includes a dedication to growing our market vegetables seasonally while offering year-round production of specialty and micro greens without the use of conventional sprays or chemicals. We diversify our offerings and farm by raising pastured and organically fed eggs and chickens, milk-fed pork, goat and goat milk products, and baked goods.  We work hard to provide healthy, beautiful food for our family and yours. We wouldn't be able to do this without the incredible support of our family near and far and that of our growing community.
