Piccalilli House Salad Dressing!

Man, we eat alot of salad!  Not usually for breakfast but it's not unheard of.  There are so many variations to this recipe, don't be afraid to make it your own.  The most important thing is that you are making it!  Add some lemon juice, or fresh thyme or a bit of walnut oil or apple cider vinegar!  Or maybe just some apple cider!  Salad dressings should be fun, seasonal and very much your own :)

1 Green Garlic

1 T dijon mustard

2 T honey

3 T Tahini

1/2 C white wine vinegar

Salt and pepper (more than you think:)

1.5-2 C Neutral Oil (vegetable or canola)

1. With an immersion blender, blend all ingredients except oil together till smooth.  Move the blender around to make sure you are incorporated.  

2. Add Oil slowly at first then in a steady stream until emulsified.

3. Taste for sweet, salt and acid!

4. Have a salad! - But don’t over-dress it! A little goes a long way, and too much will weigh down your beautiful tender leaves!
